Perfect for any dinner, this dish is traditionally fairly spicy, but easy to customize. You can choose which vegetables and beans to include and adjust the heat to be as mild or as fiery as desired. This relish pairs well with just about any meal, especially with meat.
South African Chakalaka
INGREDIENTS
- Aromatics – Onion, garlic, and ginger set the stage for a highly flavorful side dish (it also smells amazing).
- Veggies – Tomatoes, cabbage, chili peppers, carrots, and green and red bell peppers.
- Seasonings – Smoked paprika, curry, cayenne, thyme, and bouillon or stock of choice.
- Beans make this dish extra filling. You can use any beans you like, but baked beans add a sweetness that acts as a foil to the chili peppers.
DIRECTIONS
- Saute – Heat oil over medium in a large saucepan or Dutch oven. Add the onion and saute for several minutes.
- Season – Stir in the spices (garlic, ginger, smoked paprika, curry, cayenne pepper and thyme), and continue stirring for a minute or two to so the flavors bloom.
- Veggies – Next, add the tomatoes, bell peppers, carrots and cabbage. Stir to combine.
- Simmer for 5-8 minutes, stirring occasionally to prevent burning.
- Beans – Finally, add the baked beans and bouillon or stock to taste. Stir gently and continue cooking for about 2-3 minutes.
- Serve – Add salt and pepper; adjust the seasonings to taste. Serve warm.
