Festive Holiday Recipe: Malva Pudding

A warm, caramel dessert that’s easy to make and ideal for holiday celebrations.

A holiday classic, the South African malva pudding brings warm caramel comfort to the table. It's rich, soft and perfect for sharing after any festive feast.

Malva pudding has a way of turning simple moments into festive memories. Whether served with custard, cream or ice cream, it’s a dessert that brings people together. Enjoy it warm, make it your own and let it be the sweet finish to your holiday table.

MALVA PUDDING

INGREDIENTS

  • 3/4 cup sugar 
  • 2 large eggs
  • 1 tablespoon apricot jam
  • 1 overflowing cup of all-purpose flour 
  • 1 teaspoon baking soda
  • 1⁄2 teaspoon salt
  • 1tablespoon butter 
  • 1teaspoon vinegar
  • 1⁄3 cup milk

For the sauce

  • 3⁄4 cup fresh cream 
  • 7 tablespoons of butter 
  • 1/3 cup sugar (add more, if desired)
  • 1⁄3 cup hot water
  • 2 teaspoons vanilla essence

DIRECTIONS

  • Preheat oven to 350 degrees Fahrenheit. 
  • Grease an oven dish. (7 x 7 x 1 1/2 inch)
  • Beat or whip the sugar and eggs. It's quickest in a food processor, or use electric beaters. Beat until thick and lemon colored, then add the jam and mix through.
  • Melt the butter. Add the butter and vinegar to the wet mixture.
  • Mix together the flour, soda and salt in a separate bowl. 
  • Add this mixture with the milk to the egg mixture in the processor or mixing bowl. Beat well.
  • Pour into an oven-proof dish and bake until pudding is brown and well-risen, between 30 - 45 minutes. 
  • In a pot, melt together the ingredients for the sauce and stir well.
  • Pour it over the pudding as soon as it comes out of the oven.
  • Leave to stand awhile before serving. Serve warm. Because the pudding is rich, it does not really need enhancement, but if you want, serve with vanilla ice cream.
